Why not try a new vegetable this holiday season: Butternut Squash

Why not try a new vegetable this holiday season: Butternut Squash. A variety of winter squash, the butternut squash is packed with healthy benefits. It is high in vitamin A, vitamin C, potassium, and fiber. It is also a good source of many other nutrients. Although this vegetable is low in calories, it is a starchy vegetable. This means it is 90% carbohydrate, however, it differs from the carbohydrates in your bread or pasta. It is a complex carbohydrate, which means it is processed and digested a little slower and differently than simple sugar. These carbs are thought to be more beneficial in blood sugar control than simple carbs (white bread).
